14 ozs Puff pastry
1.333 cups Chorizo (sliced)
1 cup Manchego (diced)
1 egg yolk

Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.

If necessary, roll out the pastry approx. 3-4 mm thick. Cut out 12 circles and place some chorizo and some cheese on top of each one. Brush the edges with water and fold the circles in half. Press the edges together firmly with a fork and place on the prepared baking tray.
3.
Mix the egg yolk with 2 tbsp water and brush onto the pastries. Bake for around 25 minutes until golden brown.
