1 small, green chili pepper (seeds removed and finely chopped)
1 scallion (finely sliced)
1 red Bell pepper (seeds removed and cut into batons)
2 medium carrots (cut into batons)
2 sticks Celery (cut into batons)

Preparation steps

1.
Cut open the avocados, remove the stones and scoop out the flesh.
2.
Mix the avocado flesh with the lime juice, chilli and spring onion, reserving a little spring onion for the garnish.
3.
Season the guacamole with a little sea salt if required, garnish with the reserved spring onion and serve with the vegetable sticks alongside.
