Preparation steps

Rinse the cucumber, and halve lengthwise. Scrape out the seeds and dice into small pieces. Peel and finely chop the shallots. Mix with the cucumber and 2 tablespoons of salt. Let rest for an hour to release the water. Rinse, and drain well.

Bring the white wine vinegar to a boil with 100 ml (approximately 3 ounces) of water, the lemon juice, sugar, and diced vegetables. Season to taste with salt and pepper. Add the thyme, mix thoroughly, and divide into the prepared jars. Seal tightly and let cool.
