1 small Cucumber
25 ozs Catfish
½ cup all-purpose flour
1 tsp paprika (sweet)
1 tsp dried thyme
½ tsp ground Cumin
½ tsp cayenne pepper
1 Tbsp olive oil
1 Tbsp apple cider vinegar
1 Tbsp chopped Dill
2 Tbsps Orange juice
2 Tbsps light soy sauce
sugar
cup Cornmeal
2 eggs
2 tsps Mustard
cup milk
4 cups Oil (for frying)

Preparation steps

Wash the cucumber, cut in half lengthwise and scrape out the seeds with a spoon. Finely dice the cucumber halves, mix with a little salt and leave to stand.

Wash the fish fillets, dab dry and cut into two-bite sized pieces.

Put the flour into a deep plate and season with salt and pepper.

Mix the paprika, thyme, cumin and cayenne pepper with the cornmeal in another deep plate.

Rinse the diced cucumber in cold water in a sieve and drain thoroughly; squeeze out any excess liquid. Mix the oil, vinegar, dill and orange juice into the diced cucumber and season to taste with soy sauce, sugar and pepper.

Whisk the eggs with the mustard and milk in another deep plate.
7.
Heat the deep-frying fat to 180C/375F. Dip the fish fillets first in flour, then in egg and milk and finally in the seasoned cornmeal; deep fry in batches for 4 minutes until golden-brown and keep warm.
8.
Serve the fish with the cucumber salsa.
