- 1 ½ honeydew melon
- 1 Orange
- 2 Tbsps lemon juice
- 4 scallions
- 4 Chicken breasts each about 160 grams (approximately 6 ounces)
- 2 Tbsps soybean oil
- 1 tsp Curry powder
- 2 Tbsps light soy sauce
Preparation steps

Cut the melons in half, remove the seeds, peel, quarter and cut into slices. Squeeze the juice from the orange. Sprinkle the pieces of melon with the orange and lemon juice.

Rinse the scallions and cut into rings.

Rinse the chicken, pat dry, salt, pepper and cut into large pieces. Heat the oil in a nonstick skillet or wok. Brown the chicken, while stirring, for 3-5 minutes, then sprinkle with curry powder and pour in the soy sauce. Place the melon pieces in the mixture and leave until lukewarm. Serve the chicken with the melon and the sauce on plates, sprinkled with scallions and a little curry powder.
