- 3 Tbsps vegetable oil
- 2 onions (chopped)
- 2 cloves garlic cloves (finely chopped)
- fresh ginger (peeled and grated)
- 2 tsps Curry powder
- ½ tsp Chili powder
- 2 tsps Turmeric
- 1 cup Coconut milk
- 2 Tbsps butter
- 3.333 cups Scampi (or king shrimp)
- fresh cilantro (to garnish)
- 1 ⅛ cups Rice (cooked according to packet instructions)
- Papadam (cooked according to packet instructions)
Preparation steps

Heat the oil in a frying pan and gently cook the onions until soft but not brown. Add the garlic and ginger, cook for two minutes then add the spices and continue cooking for 5 minutes, stirring frequently.

Pour in the coconut milk, bring to a boil then simmer very gently for 15 minutes.

Heat the butter in a frying pan and cook the scampi or prawns until cooked through. Serve the prawns on a bed of rice with the sauce poured over and garnish with coriander leaves.
