- 1 Chicken breast (about 140 grams or 5 ounces)
- 1 Tbsp Canola oil
- 1 stalk Celery
- 200 grams Ricotta cheese
- 1 tsp green Curry paste
- 3 Tbsps freshly chopped Basil
- salt
- freshly ground peppers
- 12 sm slices Baguette
- Celery (for garnish)
Preparation steps

Rinse chicken and pat dry. Heat oil in a skillet and cook chicken, about 2-3 minutes per side. Remove and let cool.

Rinse and mince celery. Combine ricotta, curry paste, basil and celery. Cut chicken into small cubes and add to ricotta mixture. Season with salt and pepper.

Preheat oven's broiler. Slice baguette and toast pieces under the broiler for about 2-3 minutes, until crispy. Remove, let cool briefly and coat with chicken cream. Serve garnished with celery leaves.
