4 Tbsps olive oil
2 Tbsps soy sauce
14 ozs Soba Noodles (Japanese buckwheat flour noodles)
salt
2 heads large Bok Choy
peppers
2 tsps Curry powder

Preparation steps

1.

Pat tofu dry and cut into cubes as fine as possible. Heat 2 tablespoons of oil in a frying pan. Fry tofu cubes in it over medium heat, turning frequently, for 5-7 minutes until crispy. Deglaze with soy sauce and reduce for 2 minutes. Remove and set aside.

Cook pasta according to package instructions in plenty of boiling salted water until al dente. Then drain in a colander and leave to drain.

Meanwhile, clean and wash bok choy and cut into fine strips. Heat 1 tablespoon oil in a frying pan. Sauté bok choy for 3 minutes. Season with salt and pepper.

4.

Mix remaining oil with curry powder and a little salt. Mix the seasoning oil into the drained noodles. Serve noodles with bok choy and fried tofu.
