- 6 ozs Artichoke hearts
- salt
- 1 lemon (juice)
- 14 ozs Elbow macaroni
- 1 Tbsp Pine nuts
- 3 Tbsps olive oil
- 5 Tbsps White vinegar
- 2 tsps sugar
- 2 tsps Mustard
- freshly ground peppers
- 2 scallions
- 3 Tbsps yellow raisins
- 1 handful Basil
- 2 Tbsps thyme
Preparation steps

Cook the artichoke hearts in salted boiling water with the lemon juice for about 10 minutes. Drain the artichoke hearts and cut into slices. Cook the pasta in plenty of boiling salted water until al dente, drain, rinse off in cold water and drain. Toast the pine nuts in a dry frying pan, remove and set aside. Mix the pasta with olive oil, artichokes, vinegar, sugar and mustard. Season with salt and pepper.

Trim the scallions, rinse and cut into rolls. Rinse the basil, shake dry and cut into strips. Fold scallions, pine nuts, raisins and herbs into the pasta salad and season with salt and pepper.
