- 2 Tbsps salt
- 1 kilogram Roasted pork (ready to cook, with rind)
- 300 milliliters Apple juice
- 200 milliliters Beef stock
- 2 soft cooking Apple (such as Boskoop)
- 1 large red onion
- 350 grams small potatoes
- freshly ground peppers
- 1 sprig rosemary
Preparation steps
Preheat oven to 220°C (approximately 425°F).
Stir together 1/4 liter (approximately 1 cup) water and salt in a baking dish. Set roast with rind down in baking dish, place on lower rack of oven and bake about 20 minutes. Drain salt water from pan and cut diamond pattern over surface of roast. Return roast to pan, Pour apple juice over roast, reduce oven temperature to 180°C (approximately 350°F) and bake about 45 minutes. Peel and core apples and cut into wedges. Peel onion and cut into wedges. Peel potatoes and cut into quarters or sixths. Remove baking dish from oven, place apples, onions and potatoes around roast and season with salt and pepper. Rinse rosemary, shake dry, strip needles and place around roast. Return roasting pan to oven and bake about 45 more minutes.
Remove roast from oven and let stand about 10 minutes before slicing. Serve with apples, onions and potatoes.
