This beautiful sponge cake is packed with vitamin C thanks to the oranges, which helps support a healthy immune system.

If you want, you can add slices of tangerines, or mandarins, to the fruit mix on top. If you don't have a whole vanilla bean you can substitute 1 teaspoon of vanilla extract.

5 eggs (separated)
½ cup sugar
1 cup (heaping cup) all-purpose flour
2 Tbsps Corn starch
1 Vanilla bean (halved lengthways, seeds scraped out)
1 lemon (zest grated)

Preparation steps

1.

Heat the oven to 170°C / 335°F, and line a 9-10" baking pan with parchment paper.

Place two layers of orange slices into the baking pan.

Beat the egg whites with a pinch of salt until stiff. Gradually add the sugar, stirring constantly and then beat again until the mixture can be cut with a knife.

Beat the egg yolks and quickly fold into the egg whites with a whisk.

Mix together the flour, corn starch, vanilla bean scrapings and, lemon juice, and sift into the egg mixture. Mix gently until everything is combined.

Transfer the mixture to the baking pan and bake for around 40 minutes. (Test with a wooden stick).

7.

Remove the cake from the oven and leave to cool slightly then turn out onto a plate and serve.
