Easy Carrot Quiche
Ingredients
- For the dough
- 250 grams Pastry flour
- 1 pinch salt
- 1 egg
- 125 grams butter
- For the filling
- 175 grams violet carrots
- 1 Tbsp vegetable oil
- freshly ground peppers
- 4 eggs
- 200 milliliters Whipped cream
- 180 grams freshly grated Cheese (such as gruyere)
- Nutmeg (freshly grated)
- ½ cup white onions (diced)
- For preparing
- Pastry flour (for kneading)
- butter (for greasing)
Preparation steps
For the dough: Combine flour and salt on a work surface. Create a well in the center and add egg and 3 tablespoons of water. Distribute butter in small pieces all over the flour. Knead by hand to form a smooth dough. Shape into a ball, wrap in plastic and chill for 1 hour.
Preheat the oven to 200°C (approximately 390°F).
For the filling: Peel and thinly slice carrots. Heat oil in a pan and cook carrots. Season with salt and pepper. Set aside.
Peel and dice onion. Mix with cream, eggs and cheese. Season with salt, pepper and nutmeg.
Knead the dough on a floured surface and divide into 4 equal portions. Press into 4 greased mini quiche molds (about 8 cm or 3 inches in diameter). Pour egg cream into molds and bake for about 25 minutes. Add carrots and bake for another 10-15 minutes. Remove and serve warm.
