- For the marinade
- 1 pc fresh ginger (approx. 3 cm | 1inch; grated)
- 1 clove garlic cloves (crushed)
- 2 red chili peppers (deseeded and finely chopped)
- 1 pinch ground cloves
- 1 tsp ground Turmeric
- ½ tsp ground cilantro
- ⅔ cup Yogurt
- 1 tsp Corn starch
- For the curry
- 6 ½ cups lamb (from the shoulder or the leg; diced)
- 3 Tbsps vegetable oil
- 2 onions (sliced)
- 1 clove garlic cloves (chopped)
- 2 ⅔ cups Sweet potato (diced)
- 1 cup lamb stock
- salt

- 2 Tbsps fresh cilantro

1 Baking sheet, 1 Small baking dish, 1 Bowl, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Fine-mesh sieve, 1 Hand mixer, 1 Parchment paper, 1 Kitchen towel, 1 Oven rack, 1 Plastic wrap
Preparation steps

Mix the marinade ingredients together, add the meat, cover and allow to marinate for approx 1 hour in the fridge.

Heat the oil in a pan and fry the diced garlic and onions. Then add the meat and the marinade along with the potatoes and the lamb stock.
3.
Cover and simmer over a low heat for approx. 1 1/4 hours, adding a little water if necessary. Season with salt and ground black pepper and sprinkle with fresh coriander before serving.

Serve with a mixture of white and wild rice.
