800 grams lamb (ready to cook, boneless shoulder)
3 centimeters fresh ginger
2 garlic cloves
1 red chili pepper
1 onion
200 grams Natural yogurt
400 grams diced Tomatoes (canned)
1 pinch ground Cumin
1 pinch Nutmeg (freshly grated)
1 pinch ground cinnamon
1 tsp Turmeric
1 tsp Curry
1 fresh Orange (zest)
1 bunch cilantro (freshly chopped)
salt
peppers (freshly ground)

Preparation steps

1.

Rinse and pat dry meat, trim and cut into 1-2 cm (approximately 0.5 inch) pieces. Peel and finely chop ginger and garlic. Rinse and dry chile, cut in half lengthwise and chop finely. Peel onion and cut into small cubes.

Mix yogurt with tomatoes, spices, garlic, ginger, onions, orange zest and half  of cilantro. Season with salt and pepper. Place lamb into marinade and refrigerate overnight.

Place lamb with marinade into ovenproof dish and bake in preheated oven at 160°C (approximately 300°F) for about 1 1/2 -2 hours.

4.

Place curry lamb into preheated bowls and serve sprinkled with freshly chopped cilantro.
