- For the scones
- 8 ozs Pastry flour
- 1 tsp Baking powder
- 1 tsp sugar
- ½ tsp salt
- 3 Tbsps soft butter
- 6 ozs Yogurt
- 2 ozs raisins
- Pastry flour (for work surface)
- 1 egg yolk
- To serve
- 6 ozs clotted cream
- 6 ozs Jam (i.e. strawberry, blackberry)
Preparation steps

Preheat the oven to 200°C / 400°F convection.

For the scones, mix the flour with the baking powder, sugar, salt, butter and yogurt and mix just until dough becomes smooth. Knead in raisins and roll out the dough on a floured surface approximately 3/4 inch thick. Cut into circles approximately 2 inches in diameter. Place on a parchment paper-lined baking sheet, brush with beaten egg yolk and bake until golden brown, about 15 minutes in hot oven. Remove from oven and let cool on a wire rack.

Serve with clotted cream and jam.
