For the batter
120 grams Pastry flour
1 egg
1 egg yolk
200 milliliters water

1 tsp Tabasco sauce

600 grams mixed Vegetables (cleaned and cut into pieces (such as peppers, carrots, zucchini, eggplant, or tomatoes)
100 grams Pastry flour

Preparation steps

Combine the flour with the salt and water, then mix in the egg and the egg yolk. Stir in the Tabasco and allow the batter to rest for 15 minutes. Prepare the fryer and preheat the oil to 180°C (approximately 350°F).

Roll the vegetables in flour, then dip them in the batter and place in the fryer immediately. Fry until golden brown. Remove from the fryer with a slotted spoon, drain briefly on paper towels and serve sprinkled with lemon juice.
