- 4 Tbsps Crème fraiche
- 1 Tbsp cream (at least 30% fat)
- ½ tsp lemon juice
- 1 tsp Dill (finely chopped)
- 8 eggs (hard boiled, peeled and halved lengthways)
- 4 Tbsps trout Caviar
- 4 tsps Caviar
- Dill (to garnish)
- 1 microgreen
- 1.333 cups smoked Salmon (sliced)
Preparation steps
1.
Mix together the crème fraîche, cream and the lemon juice. Season with salt and ground white pepper and stir in the chopped dill.
2.
Place a dollop of the cream mixture onto each egg half and garnish with the caviar and the dill.
3.
Arrange the cress and the salmon on a plate, place the eggs on top and serve.
