1 shallot
4 Tbsps Mayonnaise

1 Tbsp lemon juice
100 grams baby Spinach
300 grams Smoked salmon
Basil (for garnish)

Preparation steps

1.

Peel eggs. Separate egg white and yolk and then coarsely chop egg whites. Peel shallot and finely chop.

2.

Mix egg yolks in a bowl with shallots and mayonnaise and season with salt, pepper and lemon juice. Add egg whites and shallots and mix. Rinse spinach, trim, spin dry and arrange leaves in 4 bowls.

3.

Add egg salad to the bowls and cover with smoked salmon. Serve garnished with basil and lemon wedges. Can be served with white bread if desired.
