Rinse and trim the endive, then halve lengthwise. Remove the core and separate the leaves.

Halve the pomegranate and remove the seeds.
3.
Divide the endive onto plates. Mix the lime and honey, and season to taste with salt and pepper. Mix in the pomegranate seeds, and drizzle over the endive.
