4 Tbsps finely chopped Fresh herbs (such as thyme, parsley, rosemary, etc.)
6 Tbsps breadcrumbs
3 Tbsps olive oil
clarified butter
½ lemon (juiced)

1 bunch parsley

Preparation steps

Rinse and peel the parsnip. Heat 1 tablespoon clarified butter in an ovenproof pan and fry the parsley roots over medium heat. Add the lemon juice and 80 ml (approximately 1/4 cup) water pour, reduce the heat, cover and cook for 6-8 minutes until soft. Season with salt and pepper.

Preheat the oven broiler. Mix the breadcrumbs, herbs and olive oil and season with salt and pepper. Spread over the parsnips and press down lightly. Place the pan in the broiler and broil until brown. Garnish with fresh parsley and serve immediately.
