- 4 Tbsps Lime juice
- 1 tsp toasted sesame oil
- 2 Chicken breasts (approx. 140 g each, chopped)
- 1 Tbsp brown sugar
- ⅞ cup Coconut milk
- 2 Tbsps vegetable oil
- 1 ½ cups Snap pea
- 2 sprigs mint (leaves removed)
- 2 handfuls Watercress
- 1 Cucumber (halved lengthways, deseeded and sliced)
- 2 Tbsps toasted Sesame seeds
- 2 handfuls freshly grated Coconut
Preparation steps

Mix together 2 tbsp lime juice with the sesame seed oil and add the chicken. Cover and leave to marinate in the fridge for around 30 minutes.

To make the sauce, place the sugar and the coconut milk in a pot with the remaining lime juice and bring to the boil. Remove from the heat.

Fry the chicken in a hot pan in vegetable oil for 5-6 minutes until golden brown. Season with salt and ground black pepper, remove from the heat and leave to cool.
4.
Blanche the mange tout in salt water for 2-3 minutes. Quench, drain and cut into fine strips.
5.
Mix all the prepared ingredients together and stir in the sesame seeds and the coconut. Season to taste and serve with the sauce.
