2 cups rolled oats
2 Tbsps coconut sugar
non-fat cooking spray
cup pitted Date
1 cup Shredded coconut
¾ cup almonds (chopped)
1 Papaya (seeded and diced)
1 cup Strawberries (hulled and quartered)
2 Tbsps dark chocolate chunk
2 Tbsps lemon juice
cup Raspberries (crushed)
½ cup Blackberry

Preparation steps

1.
Preheat the oven to 180°C (160°fan) | 350F | gas mark 4. Toss together the oats and coconut sugar in a bowl and then spritz with cooking spray. Spread out on a baking tray.

Bake for 15 - 18 minutes until crisp and starting to colour. Remove to a wire rack to cool.

Combine the coconut and pitted dates in a food processor and pulse on high for 2 - 3 minutes until smooth, pausing to scrape down the sides from time to time.
4.
Scoop out tablespoons of the mixture and roll into balls between damp palms. Roll the balls in chopped almonds to coat evenly.
5.
Toss the papaya, strawberries, and chocolate chunks with the lemon juice. Divide between servings jars and top with the toasted muesli, crushed raspberries, and blackberries. Serve with the date balls on the side.
