Exotic Fruit Tart
Ingredients
- For the dough
- 400 grams Pastry flour
- 200 grams cold butter
- 1 pinch salt
- 1 egg
- dried Legume (for baking)
- For the filling
- 2 Papaya
- 3 Limes
- 2 mint
- 400 milliliters Whipped cream
- 50 grams sugar
- powdered sugar (for dusting)
Preparation steps
For dough, pour flour on the work surface, mix with salt and make a well in the center of the flour. Cut cold butter into small pieces and add butter and eggs to well. Cut all ingredients with a knife until dough starts to crumble. Knead dough with your hands, form into a ball, cover in plastic wrap and allow to rest in a cool place about 30 minutes.
Preheat the oven to 180°C (approximately 350°F).
Roll out dough on a floured work surface, cut out circles (slightly larger than the ramekins). Cut parchment paper in ramekins size and line the ramekins with parchment paper. Press dough into ramekins, add legumes on top and bake until golden brown about 20 minutes in the preheated oven. Remove from oven, remove legumes, let cool slightly, remove from the ramekins and allow to cool.
For filling, peel papaya, cut in half, remove seeds and cut into thin slices. Rinse lime in hot water, dry and finely grate the peel. Cut lime into thirds lengthwise and cut into thin slices. Rinse mint, shake dry and pluck off the leaves. Whip cream and gradually add sugar. Season with grated lime zest as desired.
Fill tarts with whipped cream, cover with papaya slices and garnish with mint leaves and lime slices. Sprinkle with powdered sugar.
