- ½ cup butter (melted)
- 2 ¼ cups gluten-free Biscuit (crushed to crumbs)
- ½ cup condensed milk
- ⅔ cup Coconut cream (grated)
- ¼ cup white Rum
- 2 ¼ cups canned Pineapple (drained and chopped)
- 1.333 cups cream (48% fat)
- To decorate
- Kiwi (peeled and sliced)
- Pineapple
- toasted Shredded coconut (grated)
- 1 cup cream (48% fat; whipped)

1.
Mix together the butter and biscuit crumbs. Press into a 23cm|9" flan dish. Chill while you make the filling.
2.
Pour the condensed milk into a bowl and stir in the grated coconut and rum. Leave to stand for 10 minutes, then stir in the chopped pineapple.
3.
Whisk the cream until thick and fold into the mixture.
4.
Put into the pie shell and chill for 3 hours until firm.
5.
Pipe the whipped cream around the edges of the pie.
6.
Decorate with kiwi slices, pineapple pieces and sprinkle with toasted coconut.
