Quark and milk not only provide us with high-quality protein but also score points with the mineral calcium, which is important for strong bones and teeth. Additionally, using whole-wheat flour instead of all-purpose flour will make these rolls considerably higher in fiber and thus stimulate better digestion.
If you like, you can easily give the rolls a Mediterranean touch: Knead 1 tablespoon of chopped thyme leaves and a handful of finely chopped dried tomatoes into the dough.

- 125 grams Quark
- 2 Tbsps Corn oil
- 5 Tbsps milk
- 1 egg
- salt
- 225 grams all-purpose flour
- ½ packet Baking powder
- milk (for brushing)
Preparation steps
Mix quark with oil, milk, egg and 2 pinches of salt. Combine flour with baking powder and gradually stir into quark mixture, then knead into a ball. Cover and let rest about 20 minutes. If necessary, knead in a little more flour.
Divide dough into 8 equal portions, form into balls and place on a lined baking tray. Brush with milk, score by making a small slit on the top of the roll and bake in a preheated oven at 200°C (approximately 400°F) for about 20-25 minutes.
