- 4 large eggs (at room temperature)
- ½ cup milk (at room temperature)
- 2 tsps pure vanilla extract
- 1 ¾ cups cake flour
- 1 ½ cups granulated sugar
- 2 tsps Baking powder
- 1 cup butter (softened)
- Marzipan (for decoration)
Preparation steps

Position oven rack to lower-middle position. Preheat oven to 350º F. Generously coat 6 cavity mini-fluted tube pan with nonstick baking spray.

In a small bowl, using a fork, beat eggs, milk and vanilla. Set aside. Combine flour, sugar, and baking powder, in the bowl of a standing mixer. Beat the dry mixture at the lowest speed for about 30 seconds to blend. With the mixer still running, add the butter one tablespoon at a time; mix until the butter and flour look crumbly, about 30 to 40 seconds.

Add half of the egg mixture and mix until incorporated, about 10 seconds. Increase the mixer speed to medium-high and slowly add the remaining egg mixture. Beat until light and fluffy. Stop the mixer and scrape down the sides and bottom of the bowl with a rubber spatula.

Continue to beat until completely combined, batter will look slightly curdled (about 20 seconds).

Divide batter evenly between prepared tube pan cavities. Bake for 20 to 25 minutes, or until a wooden toothpick inserted near the center of the cakes comes out clean. Cake tops should be light and golden. Cool in the pan on a wire rack for 10 minutes. Turn cakes out and cool completely.

Decorate with marzipan leaves.
