Preparation steps
1.
Melt the butter in a pan until browned. Put into a bowl and stir in the honey. Set aside to cool.

Put the xylitol, powdered milk and cornflour into a food processor or blender and blend until fine and powdery.

Mix together the flour, almonds and xylitol mixture in a mixing bowl.

Whisk the egg whites lightly with a fork, until just begin to froth.
5.
Mix into the dry ingredients, then add the cooled butter mixture, mixing well.
6.
Cover the bowl and chill overnight.
7.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 25-35 madeleine tins or moulds.
8.
Spoon the chilled mixture into the tins and bake for 8-10 minutes until golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
