- flour (for the baking tin)
- ½ cup unsalted butter
- 1 organic Orange (grated zest and juice)
- 2 Tbsps freshly chopped thyme
- 2 Tbsps chopped rosemary
- 3 medium eggs
- 1 medium egg yolk
- 1.333 cups all-purpose flour
- 2 tsps Baking powder
Preparation steps

Preheat the oven to 190°C (170°C fan) | 375F | gas 5. Brush a 12-cup Madeleine mould with butter and dust with flour.

Melt the butter and leave to cool. Add the orange juice and zest, thyme, rosemary, eggs, egg yolk, flour and baking powder and a pinch of salt to the butter and mix to a smooth batter.
3.
Spoon the batter into the Madeleine tin, filling each cup about two-thirds full. Bake for 10 - 12 minutes until golden-brown and risen.
4.
Remove the Madeleines from the oven, take out of the tin and let cool. The Madeleines may be packed in cellophane bags with some herbs as a gift.
