- 5 cups potatoes (peeled and roughly chopped)
- 3 Tbsps vegetable oil
- 4 rashers Bacon (streaky, American)
- 1 onion (chopped)
- 2 tsps dried, mixed Fresh herbs
- 2 Tbsps finely, chopped parsley
- salt

Preparation steps

Preheat the oven to 200ºC (180º fan) 400ºF, gas 6. Boil the potatoes in a large pan of salted water until tender. Drain well then mash roughly with a fork.

Meanwhile, heat the oil in a frying pan and cook the bacon until the fat starts to run. Add the onion and cook gently until the onion is soft but not brown.

Mix the onion and bacon into the mashed potato with the mixed herbs and parsley. Season with salt and pepper and transfer to an ovenproof dish. Bake in the oven for about 20 minutes then keep in a warm place until ready to serve.
