- 1 chicken (approx 36 oz; cut into 8 pieces)
- 1 tsp paprika
- 1 tsp Curry powder
- 1 tsp ground Cumin
- 4 Tbsps olive oil
- 1 Orange (washed and sliced)
- 1 bay leaf
- 2 stalks rosemary
- 5 cups waxy potatoes (peeled and sliced)
- 1 cup chicken stock (or water)

Preparation steps

Heat the oven to 425°F.

Season the chicken pieces with salt, pepper and rub with the paprika, curry powder and cumin. Place the chicken pieces in a roasting pan, drizzle with the oil and cook in the preheated oven for 20 minutes.

Turn the chicken pieces over and add the orange slices, bay leaf, rosemary leaves and potatoes. Pour over the stock and roast for a further 20 - 30 minutes, turning occasionally.
