34 ozs large Zucchini (2 large zucchini)
2 garlic cloves
1 red Pepperoncini
14 ozs Whole grain Fettuccine

4 Tbsps olive oil
5 ozs cream cheese
4 Tbsps milk

1 ¾ ozs Parmesan
8 ozs Smoked trout

Preparation steps

1.

Clean zucchini, halve, and cut lengthwise into strips. Peel and chop garlic. Halve chili peppers lengthwise, remove seeds, wash and dice very finely.

Cook pasta according to package directions in plenty of boiling salted water until al dente. Drain in a colander and leave to drain.

While pasta is cooking, shave Parmesan cheese and cut trout fillet into bite-sized pieces. Heat olive oil in a large frying pan. Sauté garlic, pepperoncini, and zucchini in it for about 3-4 minutes over medium heat. Add cream cheese and milk and stir to make a creamy sauce. Season with salt and pepper.

Add drained pasta to pan, mix in, season with salt and pepper and arrange in deep plates. Sprinkle Parmesan cheese and trout pieces over the pasta.
