- 12 ozs Puff pastry
- 6 Figs (sliced)
- 4 Tbsps Quince jelly
- 3 ½ ozs Manchego (finely diced)
- 2 Tbsps sliced almonds (toasted)
Preparation steps

Heat the oven to 220°C / 425°F, and line a baking tray with grease-proof paper.

Roll out the pastry and cut out 4 circles of approx. 6-inches in diameter. Place on the baking tray. Arrange the sliced figs in a fan pattern on the pastry, leaving a small gap around the edge.

Heat 2 tbsp of quince jelly so that it melts. Brush over the figs and the edge of the pastry. Bake the tartlets in the oven for around 12 minutes until light golden brown. Scatter cheese over the tartlets and bake for a further 5 minutes until the cheese has melted.
4.
Take the tartlets out of the oven and top with the remaining jelly. Serve sprinkled with toasted almonds.
