Preparation steps

Rinse steaks, pat dry and season with pepper. In a pan, sear steaks in hot oil, about 3 minutes per side (depending on the desired degree of doneness).

Season steaks with salt, cover with foil and let rest about 10 minutes. Cut steaks into thin slices, arrange on a platter and season again with salt if needed. Serve garnished with fresh frisee, if desired.
