4 Beef medallions (fillet)
2 Tbsps olive oil
freshly ground peppers

4 slices Bacon

Preparation steps

1.

Preheat oven to 200°C (approximately 400°F).

Rub beef filets with olive oil. Season with salt and pepper and wrap each in a slice of bacon. Secure with kitchen twine. Heat 1-2 tablespoons of oil in an ovenproof frying pan and brown filets over medium heat for 3-4 minutes. Turn and brown other side for another 3-4 minutes. Roll filets on sides to brown bacon.

Place filets flat in pan and place on middle rack. Cook for 4-10 minutes or until filets reach desired temperature.

Remove kitchen twine and serve.
