2 Bell pepper (1 each red and yellow)
1 Zucchini
3 red onions
4 Tbsps olive oil
1 Tbsp thyme
salt
freshly ground peppers
2 balls Mozzarella (or bocconcini, about 125 grams)
1 Tbsp Caper
1 Tbsp lemon juice
½ tsp grated lemon zest
1 tsp Sambal oelek
1 sm head Romaine lettuce
1 large Flatbread (or 4 individual flatbreads)

Preparation steps

Preheat broiler. Rinse the bell peppers, halve, remove seeds and ribs and cut into strips. Rinse, trim and slice the zucchini. Peel the onions and cut into strips. Toss the vegetables with 2 tablespoons olive oil and the thyme leaves on a baking sheet. Season with salt and pepper and spread in an even layer. Broil until tender and browned in spots, watching carefully.

Cut the mozzarella into small pieces and marinate with the capers, remaining olive oil, lemon juice, lemon zest, and sambal oelek. Season with salt and pepper. Rinse the romaine lettuce, spin dry and chop.

Slice the flatbread into quarters, toast under the broiler, watching carefully, for about 1 minute. Stuff the warm bread with romaine lettuce, grilled vegetables and marinated mozzarella. Serve immediately.
