- 1 cup Ricotta cheese
- ¼ Nutmeg (grated)
- 0.333 cup Parmesan (grated)
- lemon zest (grated)
- mint (finely chopped)
- salt
- peppers

- 8 Edible flowers (with courgettes attached, preferably)
- lemons (juiced)
Preparation steps
1.
Mix together the ricotta and flavourings. Season carefully.
2.
Open the courgette flowers very gently and snip off the stamen inside. Rinse them very carefully.
3.
Using a teaspoon, fill the flowers with the mixture and press the petals together to keep the mixture from leaking.
4.
Steam them for 5 minutes to warm through, then serve with tomato salad and a squeeze of lemon.
