- 12 Sole fillet
- 24 large Prawn (deveined, and peeled)
- 2 heads Broccoli
- 10 Celery
- 3 Tbsps sunflower oil
- salt
- peppers

Tip: at the end of cooking the sole roulades, remove them from the pan and deglaze it with 10 cl white wine dry scraping the bottom of the pan with a wooden spoon to loosen the juices. Reduce by half and sprinkle the roulades of sole in the juices.
Preparation steps

Cut the fillets of sole in two lengthwise.

Wrap the strips of sole around the prawns. Keep them wrapped with a cocktail stick or toothpick.

Cut the broccoli into small florets. Put them in a steamer basket. Place the basket on a suitable pot filled with hot water. Season with some salt and pepper, cover and steam for 20 minutes.

Wash, dry and chop the chives.

Meanwhile, heat sunflower oil in a sauté pan. Place roulades of sole and prawn in the sauté pan and cook over medium heat 5 to 7 minutes regularly and carefully turn them. Remove from the heat.
6.
Season with some salt and pepper, sprinkle with the chives. Keep warm.
7.
Divide the broccoli florets between the plates, sprinkle them with a drizzle of olive oil. Add the roulades of sole and prawn and serve immediately.
