Fish Köfte
Ingredients

- 300 grams Cod
- 300 grams Salmon
- 2 tsps grated Lemon peel
- juice of lemons
- 1 small Fennel bulb (finely chopped)
- 2 Tbsps finely chopped cilantro
- 5 green chili peppers (finely chopped)
- 4 scallions (finely chopped)
- 2 tsps ground fennel seeds
- 2 tsps ground Coriander
- salt
- 2 tsps garlic cloves (finely chopped)
- 2 tsps finely grated ginger
- 4 tsps coarsely crushed peppers
- For raita
- 1 Cucumber
- 450 milliliters Yogurt (0.1% fat)
- 4 Tbsps finely chopped Dill
- 1 chopped garlic clove
- 1 Tbsp vegetable oil
- ½ tsp Mustard seed
- ½ tsp Cumin
- 1 pinch Asafoetida
- 4 Curry leaves
Preparation steps
Cut cod into cubes and very finely chop in the food processor. Finely chop the salmon. Combine both fish with lemon zest, lemon juice, fennel, cilantro leaves, chile peppers, scallions, ground fennel and coriander, 2 tablespoons oil, garlic, ginger, and 2 teaspoons coarsely crushed pepper and mix well. Divide mixture into 12 portions and shape into logs on a wooden skewer.
For raita, peel cucumber, cut in half lengthwise, remove seeds and grate roughly. Squeeze excess liquid from cucumber. Mix cucumber with yogurt, dill, remaining coarse crushed black pepper and garlic. Coat a sauté pan with oil and fry mustard and cumin seeds and curry leaves. Add the seeded oil to the yogurt mixture. Stir in asafetida.
Either grill or sauté fish skewers until golden brown. Serve with raita on the side and basmati rice, if desired.
