700 grams redfish fillet
200 grams Long grain rice
1 onion
2 pkgs crushed Tomatoes (about 500 grams)
2 Tbsps small Caper
1 bay leaf
2 Tbsps butter
salt
freshly ground peppers
2 Tbsps lemon juice
1 bunch Basil (cut into strips)

Preparation steps

1.

Cut fish fillets into bite-sized pieces, season with salt and pepper and sprinkle with lemon juice.

2.

Bring rice to a boil in double amount of lightly salted water and allow to swell on the lowest heat. 

3.

Peel onion and chop finely. Heat butter in a large pan and saute onion until translucent. Add bay leaf and saute briefly. Add tomatoes and broth, season with salt and pepper and simmer, covered, for 10 minutes.

4.

Add fish to the tomato sauce and simmer for 4 more minutes. Add cooked rice, capers and sprinkle with basil strips. Serve.
