Preparation steps
1.
Preheat the oven to 180°C| 350F | gas 4.
2.
Place the cod fillets onto a foil lined baking tray. Drizzle with olive oil and some salt and pepper.

Cut the tomatoes into small pieces removing any excess juice. Finely chop the thyme keeping a little back unchopped for garnish.
4.
Sprinkle the tomatoes, onion and herbs around the cod, and season with salt and pepper. Place in the oven and roast for 20-25 minutes until cod is tender.
5.
Shred the fillets into large chunks using a fork then serve with a garnish of fresh thyme.
6.
Quarter the lemon and serve each helping with a lemon wedge.
