Flatbread Wraps with Vegetables

- 1 Zucchini
- 4 stalks white Asparagus
- 4 stalks Celery
- 1 red Bell pepper
- 1 yellow Bell pepper
- 4 large Lettuce (eg: frisee lettuce, Lollo Bianco)
- 1 garlic clove
- 3 Tbsps olive oil
- ¼ tsp ground Cumin
- salt
- freshly ground peppers
- 4 Lavash bread
Preparation steps
Rinse, trim and cut zucchini lengthwise into 1 cm (approximately 1/2 inch) thick slices. Peel white asparagus, trim the woody ends and cook in salted water until al dente (approximately 15-20 minutes). Drain. Rinse, clean and cut celery into 12 cm (approximately 5 inch) long pieces.
Rinse, dry, halve and remove seeds and ribs from bell peppers. Cut into strips. Rinse lettuce leaves. Peel and finely chop garlic and mix with olive oil and cumin. Place the vegetables on a baking sheet and season with salt and pepper. Sprinkle with olive oil. Cook vegetables under broiler, watching carefully and turning occasionally, for approximately 8-10 minutes. Remove from heat and let cool slightly. Warm bread under the broiler, watching carefully. Remove from oven and let cool slightly. Place lettuce and vegetables onto bread and roll into wraps. Cut flatbread wraps in half and serve with toothpicks.
