Preparation steps

1.

Coarsely chop the tomatoes, then puree with the tomato paste and the butter. Rinse the basil, pat dry, and finely chop the leaves. Stir the basil into the butter, then season to taste with salt and pepper.

Toast the nuts in a dry pan until fragrant. Place on a plate and let cool.

Mix the nuts with the butter, then season to taste with salt.

Finely crush the mushrooms in a mortar. Peel and finely chop the shallots. Heat 1 tablespoon of butter in a pan. Sweat the shallots and mushrooms in the butter. Mix the mushroom mixture with the remaining butter, then season to taste with salt. 

5.

Peel the garlic and pass through a press. Sweat the garlic in 1 tablespoon of butter. Rinse the herbs, pat dry, and thoroughly chop. 

6.

Mix the garlic and the herbs with the remaining butter. Season to taste with lemon juice, salt, and pepper.
