- For the rose petals
- 1 egg white
- 20 Rose petal
- 4 Tbsps sugar
- For the cream
- 1.333 cups cream (at least 30% fat)
- 1.333 cups milk
- 2 Tbsps Rose water
- 1 tsp ground cinnamon
- 2 egg yolks
- 2 tsps Corn starch
- 3 Tbsps sugar
- Plus
- cinnamon
Preparation steps

Heat the oven to its lowest temperature and line a baking tray with greaseproof paper.

Gently beat the egg white and brush onto the rose petals. Dust the rose petals with sugar and place on the prepared baking tray. Dry in the oven for around 3 hours.

In a pot, mix together the cream, milk, rose water and the cinnamon and heat until the mixture just starts to boil. Mix together the egg yolks, cornflour and the sugar until creamy. Stir the hot cream mixture into the egg yolk mixture and sieve back into the pot. Heat on a low temperature until the mixture is thick enough to coat the back of a spoon. Do not allow to boil.

Divide the cream into 4 dessert bowls and chill. Serve sprinkled with cinnamon and garnished with the sugared rose petals.
