l white wine
¼ l chicken stock (or fish stock)
3 Tbsps Quark
1 egg yolk

lemon juice

Preparation steps

1.

Place the shallots, saffron, white wine and chicken stock in a pot. Bring to a boil.

2.

Pour the mixture through a sieve into a bowl. In another bowl, stir the quark with the egg yolk. Add to the sauce and beat until foamy. Season with salt, pepper and lemon juice to taste.
