2 Puff pastry dough (round shape, from the refrigerated section)
2 eggs
125 grams room temperature butter
125 grams sugar
100 grams ground almonds
40 grams ground Pistachio
2 Tbsps Orange blossom water
2 drops Almond extract
1 egg yolk
2 Tbsps milk
peeled almonds (for garnish)
Hazelnuts (for garnish)
Pine nuts (for garnish)

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F).

Mix the butter with the ground almonds, pistachios, and sugar until smooth. Add the eggs, almond extract, and orange blossom water and mix well. Chill.

Roll out one sheet of puff pastry and place on a parchment-lined sheet tray.

Spread the cold nut paste from the center outwards, leaving a rim of 1.5 cm (approximately 1/2 inch). Place the second sheet of puff pastry on top. Brush the edges with egg white so it sticks together.

Whisk the milk with the egg yolks and brush the top of the puff pastry with it. Score the surface into a flower shape with a sharp knife. Garnish with peeled almonds, hazelnuts, and pine nuts. Cut a small hole in the middle of the dough so that it doesn't rise too high. Bake in a hot oven for 20-25 minutes until golden brown.

To serve: Cut into pieces.
