Preparation steps

1.

Scrub potatoes and cut lengthwise into strips about the thickness of a finger. Soak potato strips in a bowl of cold water. Drain and pat dry with paper towels.

Place oil in saucepan and heat to 160°C (approximately 325°F). Fry potatoes in batches for 3 to 4 minutes each batch until potatoes are a pale yellow color. Remove with a skimmer, drain and place on paper towels. Allow to cool.

For second frying, raise the temperature of oil a little until about 180°C (approximately 350°F). Fry potatoes in batches for about 2 to 3 minutes until crisp and a golden brown color is achieved. Remove from oil and drain on absorbent paper. Keep in a warmed oven at 100°C (approximately 210°F) until all French fries are cooked.
