- 2 dozens fresh Oyster (scrubbed and cleaned)
- ½ cup Red onions (finely diced)
- ½ cup english Cucumber (seeds removed and finely diced)
- ½ cup fresh Lime juice
- 2 Tbsps good-quality olive oil
- ½ tsp Tabasco sauce
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 Tbsp fresh mint (finely chopped)
Preparation steps

Shuck oysters, strain and reserve oyster liquor. Reserve bottom half of shell and discard top half of shell.

In a glass bowl, combine reserved oyster liquor, red onion, cucumber, lime juice, olive oil, Tabasco® sauce. Toss gently to incorporate; season to taste with salt and pepper. Add oysters and marinate for about 15 to 20 minutes.

Meanwhile, arrange oyster shells on a bed of ice. Stir the chopped mint into the oyster mixture. Place one oyster and a spoonful marinade in each oyster shell and serve.
