- 1 clove garlic cloves
- ¼ cup fresh mint
- ½ tsp kosher salt
- ½ tsp freshly ground Black pepper
- ½ cup extra virgin olive oil
- ½ cup Parmesan (grated)
- 1 sprig fresh, purple Basil (optional)
- 1 sprig fresh mint (optional)
Preparation steps

Combine the peas, garlic, mint, salt and pepper in a food processor and puree. With the machine running, add the olive oil in a steady drizzle.

Transfer the pea puree to a small bowl and stir in the Parmesan cheese. Garnish with basil and mint, if desired. Serve as a side dish with meat or fish.
