150 grams Couscous (instant)
1 pinch salt
1 pinch cinnamon
1 pinch Cumin
1 pinch Cardamom
4 Tbsps raisins
2 Tbsps chopped almonds
1 Tbsp Vanilla sugar
1 Orange
4 sour Apple (such as cox orange)
4 Tbsps butter
2 sugar
400 grams Greek Yogurt (0.1% fat)
1 Tbsp honey
1 splash lemon juice

Preparation steps

Mix the couscous with the salt, cinnamon, cumin, cardamom, raisins, almonds and vanilla sugar. Rinse the orange, wipe dry, grate about 1 teaspoon of zest and add to the couscous. Squeeze out the juice, fill pan up with water to 150 ml (approximately 2/3 cup) and boil again in a pot. Stir the couscous, remove from heat and let soak for about 10 minutes. Loosen up the couscous with a fork.

Rinse, peel and cut the apples into slices. Heat 2 tablespoons of butter in a pan. Add the sugar until slightly caramelized. Add the apple slices and saute for about 3 minutes until light brown.

Heat the remaining butter in another pan and pour in the couscous. Allow to fry for 2-3 minutes until crispy, then turn over in portions and fry on the second side.

Mix the yogurt with honey and a squeeze of lemon juice. Serve the couscous with apples and yogurt on plates and serve immediately.
