500 grams potatoes
1 bunch scallions
salt
peppers (from the mill)
Nutmeg
1 Tbsp Potato starch
3 egg yolks
1 Tbsp softened butter
4 Tbsps Whipped cream
clarified butter (for frying)

Preparation steps

1.

Peel the potatoes and cook in boiling salted water for about 20 minutes. Drain, let cool slightly, then press through a potato ricer into a bowl and stir in starch, egg yolks, butter, cream, salt, pepper and nutmeg.

Rinse, shake dry and finely chop scallion, then stir into the batter.

On a floured surface roll out the dough and form small patties, each about 2 cm (approximately 3/4 inch) thick.

Fry in a pan with butter over medium heat for about 3-4 minutes, or until brown on both sides. Keep each finished patty warm as you fry the rest.

5.

Serve with soy sauce as desired.
